Pork and Lentil Stew

- 1 lb500 gCanadian Pork Braising Cubes
- 2 Tbsp25 mLall purpose flour
- 1 Tbsp15 mLcanola oil
- 22cloves garlic, minced
- 44carrots, sliced
- 22leeks, washed well and chopped
- 11stalk celery, chopped
- 3/4 cup175 mLred lentils
- 19 oz540 mLcan tomatoes
- 4 cup1 Lbeef stock
- 1 tsp5 mLbasil
Directions
Trim any visible fat from cubes. In a plastic bag, coat pork cubes with flour. Heat oil over medium-high heat in a large saucepan; add pork and garlic and stir-fry 3 minutes, to brown. Add raw vegetables and stir-fry 3 minutes. Add remaining ingredients, bring to a boil, reduce heat to low and simmer for 1 hour (if time permits, let stew stand for 30 minutes before serving, to thicken it slightly). Serve with crusty bread.
