- 2 Tbsp25 mLhoisin sauce
- 1 Tbsp15 mLtomato ketchup
- 1 Tbsp15 mLsoy sauce
- 1 Tbsp15 mLrice wine or cider vinegar
- 2 tsp10 mLgrated orange zest
- 1/4 cup50 mLfresh orange juice
- 1 tsp5 mLhot chili sauce, or to taste
- 1 tsp5 mLground cumin
- 1 tsp5 mLdark sesame oil

Directions
Combine all ingredients, except the chops, in a non-reactive bowl, using a whisk to mix thoroughly. Add chops to bowl and turn to coat well. Cover and refrigerate for a minimum of 4 hours, preferably overnight. Preheat barbecue on high; reduce heat to medium. Remove chops from marinade. Grill chops on lightly oiled grill over medium heat for a total of about 12 minutes, turning two or three times. When turning pork use tongs, not a fork, which will pierce the meat and allow juices to escape. Chops are ready when golden brown and the meat feels firm to the touch. If there is still a hint of pink around the bone, the chops are perfectly cooked. If rib chops are not available, centre-cut chops or steaks are perfectly acceptable substitutes.
