Hopped Up Pork Chops

- 66Canadian Pork Rib or Centre Chops*
- 12 oz355 mLbottle cream ale
- 1 cup250 mLspicy tomato ketchup
- 3/4 cup175 mLsoy sauce
- 1/2 cup125 mLseasoned rice vinegar or cider vinegar
- 1/3 cup75 mLsugar
- 2 Tbsp25 mLchopped fresh ginger
Directions
In a saucepan, combine all ingredients except the chops and bring to a boil. Continue to boil sauce until it starts to thicken slightly (about 15 minutes), stirring occasionally. Set aside 1/2 cup/125 mL of sauce for basting. Pre-heat barbecue on high; reduce heat to medium. Place chops on lightly oiled grill and baste with reserved sauce. Grill the chops for about 6 minutes per side, turning chops and basting until chops are just cooked through. Remove from heat and allow to rest for a few minutes.Serve chops with remaining sauce.
*Choose thicker chops — these are easier to cook without overcooking.*
