- 2 lbs1 kgCanadian Pork Loin, Leg or Shoulder Roast or Steaks, boneless
- 2 Tbsp25 mLcanola oil
- 22McIntosh apples, peeled, cored, sliced
- 11medium onion, sliced
- 1/2 cup125 mLthinly sliced celery
- 1/4 cup50 mLchopped parsley
- 1 tsp5 mLcinnamon
- 1/2 tsp2 mLsalt
- 1/4 tsp1 mLblack pepper
- 1/8 tsp0.5 mLsage
- 3/4 cup175 mLbeef stock
- 2 cups500 mLmashed potatoes
- melted butter or margarine
- 1/4 cup50 mLParmesan cheese
Directions
Cut pork into 1″/2.5 cm cubes. Heat oil in a large skillet over medium heat. Add pork and brown. Remove pork from pan and transfer, along with sliced apples, to a deep 10 cup (2.5L) baking dish; sprinkle with sliced onions, celery, parsley, cinnamon. salt, pepper and sage. Pour beef stock over top. Spread mashed potatoes evenly over top; brush with a little melted butter and sprinkle with Parmesan cheese. Bake at 325ºF (160ºC) for 55 minutes or until bubbling hot and potatoes are golden.
Serve with a tossed salad and crusty bread.
