Curried Pork Peach Schnitzel

- 1 lb500 gCanadian Pork Leg Inside, Scallopini or Schnitzel (4 slices)
- 1/21/2onion, coarsely chopped
- 1 cup250 mLvegetable broth
- 4 tsp20 mLcornstarch
- 1/2 cup125 mLpeeled and coarsely chopped fresh peaches (or canned peaches, packed in juice,drained)
- 2 Tbsp25 mLpeach jam
- 2 tsp10 mLcurry powder
- 3/4 tsp3 mLground ginger
- 1/4 tsp1 mLsalt
Directions
Place each pork slice between sheets of waxed paper and, using a mallet or rolling pin, pound lightly. In nonstick or lightly oiled skillet over medium heat, sauté pork with onions, until pork is golden brown on both sides, about 8 minutes. Reduce heat to low. In medium bowl, blend vegetable broth and cornstarch; stir in remaining ingredients and pour mixture over pork. Cook and stir gently until sauce thickens, about 5 minutes.
