Apricot Almond Stuffing

- 1/2 cup125 mLdiced dried apricots
- 1/2 cup125 mLorange juice
- 1/4 cup50 mLbutter
- 11medium onion, chopped
- 1/2 cup125 mLchopped celery
- 6 cups1.5 Lsoft bread cubes
- 11tart apple, peeled and chopped
- 1/2 cup125 mLslivered almonds
- 1 tsp5 mLsalt
- 1/2 tsp2 mLsage
- freshly ground pepper to taate
Directions
In a small saucepan, simmer apricots and juice for 5 minutes until fruit is soft. Melt butter in a skillet over medium heat. Cook onion and celery until limp. Place in a large bowl. Toss with apricots and remaining ingredients. Use for rack, crown, loin or leg roasts of pork.
